For tonight’s dinner, I stole an idea from an earlier blog post to use up the rest of our cherry tomatoes. I didn’t alter it much. I used more garlic, and I didn’t have any Ohio City pasta. I used basil instead of thyme, and it was delicious. We were so eager to dig in that we even forgot to take a picture before we had eaten! It was a nice dinner at the end of the first week of school, and we managed to use up 90% of our box for the week. With any luck, I’ll manage to get back on track quickly next week. Hope to see some of you at the market tomorrow morning!
I, too, have been going right to the blog and making some of Bethy’s dinners! I especially like the quiche where she lines potatoes in the bottom of the dish and adds sauteed spinach and peppers. It made good lunch leftovers. I can’t believe that I am awake, but I am back on the school schedule, darn it!
So glad you liked that recipe. Sounds great with basil. My basil was terrible this year, but the thyme went crazy. So, I have been using that in everything. Nice to see you both (and Dusty, so CUTE!) at the market! GP did really good. He was dancing to the music!
