I made a big pot of green beans and potato soup today for lunch. Tom was right when he said it must be the Fall like weather that had me making a casserole, now soup. I did use all the green beans and half of the yellow beans from Birdsong in this soup. I found the recipe – fireflyblog.org, and had everything in the house already. So, no grocery store run needed. I like that. The soup was good and pretty healthy.
Recipe: 1 lb green beans ,(I used more & some yellow too) cut into bite size pieces, 4-6 large potatoes, cubed, 4 med carrots, cut in circles, 6 c water or veggie stock (I used chicken), 1 tbsp tomato sauce, 1/2 c milk, 1 tbsp, sour cream,1 tbsp olive oil, 1 tbsp dried parsley, 1/2 tsp garlic powder, 2 tbsp Mrs Dash Original Blend Seasoning ( I could not believe I had this, don’t know when I bought it), 1/4 tsp pepper ( I think that was a little too much ) , 1/4 tsp paprika. Saute carrots for 5 min in olive oil, add green beans, potatoes, water or stock, seasonings. Cook for 30 min. Add tomato sauce, cook 15 min. At the end mix sour cream & milk together and stir in. Take off heat.
I did have Raphael’s bread from the farmers market to dip in the broth. Yum!

Yes, that it was. They had it for dinner. Probably too peppery for Mom, but, I told her to stir in some plain yogurt if it was too spicy.
That looks perfect for these cool evenings. I’ll probably make this later in the week to help use up all the beans. By the way, has anyone else been disappointed in our lack of carrots from Matt? I only remember one week of them, and they were so good. Hopefully there are more to come!
Yes, I hope we get some more carrots too. They were so sweet. If I make that soup again, I think I would put some garlic & onions in it. Seemed like it was lacking that. But, it was good & comforting.
