Who Likes Gazpacho?!

I did not think I liked a cold soup at all either!  This was my first, and I really liked it! It tastes so fresh and healthy.  Lots of veggies, and since you don’t have to cook anything, really easy. I wanted to use up all of the tomatoes , cucumbers and garlic from Matt’s haul. I had also bought too many  peppers at the farmers market.  So, I looked up a Barefoot Contessa Gazpacho soup recipe. (Copyright 1999 The Barefoot Contessa Cookbook) I thought it would use everything up, and if I didn’t like it, there is always GP!  (I am sure he will be enjoying this later.)  The recipe made quite a bit. Recipe as follows: 1 cucumber chopped, skin on. 2 red bell peppers,( I used cubanelle from the market) cored and seeded. 4 plum tomatoes , chopped. 1 red onion,chopped. 3 garlic cloves, minced. 3 cups tomato juice, 1/4 c white wine vinegar, 1/4 c good olive oil, 1/2 tbsp salt, 1 tsp black pepper. Put the veggies in a food processor separately.  After each veggie is processed, combine them in a large bowl and add garlic, tomato juice,vinegar, olive oil, salt and pepper.  Mix well and chill. I added a dollop of sour cream on top.  Avocado slices would have been good also, but I didn’t have any.  You might be surprised and really like this!

    While this looks interesting, I am not sure about cold soups. I had strawberry soup once, and I wanted it sweeter and over ice cream. Can you heat up this soup or would that totally make Martha Stewart shudder in shame?

    I don’t know about heating it, but it looks like it would be a good salsa! Where’s the tortilla chips?

    I bet you could use it as a soup base for veggie soup or chili.

    You are right. If I made it a little thicker and added some heat. Some hot peppers or hot sauce , it would be a great salsa. Thanks for the idea! And also as a soup base. Good thinking Elyse!

    I wish that I liked gazpacho. Honestly, all those fresh veggies in a cool, summer soup should be refreshing – like summer in a bowl. But I’ve tried it a few times and just can’t get my taste buds to do it. Maybe yours would have been the one to change my opinion. It does look great!

    Looks delicious. You must try vicchysoise, acold French potato soup. Delicious but a litle caloric. I used to reduce the cream a bit when I made it. ( long, long ago)

    And Tom, Elyse was right. This soup could have been a great salsa. I would put less tomato juice in it. And, add one or two jalopeno peppers in with the cubenell peppers. I am going to try that next.
