This is how dinner usually looks at our house. Bob has meat of some sort, steak tonight, grilled veggies & we share the carb. Tonight’s carb , Ohio City Pasta’s mixed herb. (SO GOOD, I put some fresh parsley on mine.) I like grilled veggies too, but not a huge fan of squash. One of his favorites. I got the yellow squash at the farmers market today and added some red onion for his dish. I made myself, a nice chopped salad with the fresh cucumber we got in our box today with a little red onion. I put my salmon in a cast iron skillet with melted butter, lime juice, lime zest, and S& P. I put it in the oven for 8 min at 400 degrees. I really think salmon is so much better in the oven then on the grill. It does not get dried out in the oven. Just my personal take on that. It really hit the spot after a very hard day of swimming in the pool, right Care? ( I’ll give Bob credit, he mowed and cleaned out gutters and then swam. Oh, and that was after he did some Charlie jobs.) I am so full but quite happy!
Both dishes look so good to me! I am not as comfortable with the grill as Kim is so I will try to make salmon that way! We had the mixed herb pasta too, and it is now my new favorite. Kim grilled shrimp, asparagus, zucchini, onions, and red pepper and dumped it over the pasta. We then grated parmesan cheese over the whole dish. I think he put a little teriyaki sauce over it before he grilled everything. I should have taken photos, but I was too tired from a day at the pool!
Ah, summer. We were sacked out by 9:00. Sorry, Tom and Jeff!
Ha no problem. These photos look so great. The steak dish looks fantastic. You took a beautiful picture. Carolyn, your meal sounds great too. We had a pizza, too tired to do anything more than that and some s’mores in the née pit 🙂
