I made a potato salad with the scallions and the new potatoes from our recent box. It had a little diffferent twist. Blue cheese crumbles and bacon. I made it to take to Carolyn and Kim’s last night for dinner, but grabbed the dish of left over baked beans instead. ( dishes looked the same) Sorry Care! You can have some for lunch today. Recipe : 4 slices of bacon, browned, drained & crumbled , 2 pounds red new potatoes, boiled till tender , sliced , 1/2 c. olive oil, 3 tbsp white vinegar, 1 bunch green onions, chopped, 1/2 tsp salt, 1 tsp pepper & 1 1/2 ounces blue cheese crumbles. It looks great. I have really taken to potato salad lately. There’d are so many unique ways to make it. It looks yummy.
I’ll have to try the recipe. I love potato salads that avoid the “mayo glop” syndrome. Looks delicious.
