Dinner al fresco

Tonight’s meal was ironically inspired by Tionna, who planned to make lettuce wraps a few nights back.  Though we’ve heard that meal didn’t actually happen, it still sounded so yummy that we had to do something similar.  You can see in the picture that I chose to make an “open-faced wrap,” or I suppose at that point you might choose to call it a salad instead!

The meal was Asian-themed cuisine in the same way that Taco Bell is Mexican-themed.  Here’s the sauce that I used (amounts approximate):

1/4 c. sugar

1/2 c. water

2 T. soy sauce

2 T. cider vinegar

2 T. ketchup

2 T. mustard

1 T. lemon juice

Splash of hot sauce

While all of that heated in a sauce pan, I simultaneously boiled some rice and fried chicken in a bit of olive oil with onion powder (only because I didn’t have a real onion in the house), then tossed in mushrooms and bamboo shoots and maybe a teaspoon of minced garlic.  While this meal is fast, you can tell it also tries to dirty every pan in the house.  Finally, I poured sauce over the chicken, et al. and let it simmer for a bit.

I served the dish on a lettuce leaf: a bit of rice, the chicken mixture, more lettuce cut in a chiffonade, a drizzle of additional sauce, and some sesame seeds.  It was a pretty good dish, and it could not have been a more beautiful evening to enjoy the back yard.

    Yum! We are totally making this! What are the side dishes- it look like roasted cherry tomatoes and egg rolls? Yes? No? I agree, a perfect night for dining outdoors- we had leftovers and it was still wonderful!

      They were yummy red grapes and you are right, egg rolls. I love mini egg rolls with sweet and sour sauce brought to you by Giant Eagle 🙂 Nothing special but they are a great small side dish.

    Tom as you know anytime you need to borrow something come on over. We did have an extra onion. I really think we need to do something like this as well. And yes today is a perfect day.

    I love this idea! Sounds so fresh and crunchy. And the egg roll, a perfect side. I’ll probably be making a veggie version of this meal. Bob will have his with a side of meat no doubt.
