So I got excited when I saw actual new potatoes in our CSA box this week! So we decided to eat a simple dinner of a piece of fish done on the grill,(we found trout from Acme that was really good!), steamed potatoes and creamed peas. However, after barely boiling those lovely peas, we only served them with a bit of butter, salt and pepper. As Kim was washing the potatoes, the new skins were so thin that they literally scrubbed off! It was such a simple but really delicious meal. Vegetables that you have had all of your life taste so wonderful when they are fresh! And to think that I used to hide my peas under the side of my plate when I was little!
Here is the potato recipe (but you really don’t need it!)
Herby Steamed Potatoes (from Kim’s favorite cookbook- The New Basics Cookbook)
12 very small red new potatoes scrubbed
1 cup water
1 tbsp. butter
Coarse (kosher) salt, to taste
Coarsely ground black pepper, to taste
1 tbsp. chopped fresh Italian (flat leaf) parsley or fresh dill
Steam the potatoes until tender (around 30 minutes)
Drain the potatoes and return to the saucepan. Shake the pan to remove remaining moisture, 10 to 15 seconds. Then remove from heat, add butter, salt, pepper, and parsley, and toss well. Transfer to a bowl and serve immediately.
Oh, when I look at the photo of the peas it looks like it was a little more than a “bit” of butter! And Melissa got us the serving dish that we put the potatoes in! I think it was from the pottery place that she and Brian used to go to in Canada!?
The peas and potatoes look great. I was amazed when helping Tom last night shell peas how much work you do for so little peas….wow.
We had our peas with a little butter and some chopped mint from our garden. Delicious.
