I had to take a picture of the rum cake. I just thought it deserved to be photographed. Too bad you can’t smell it… the fragrance of rum is almost too intoxicating for words……. Post recipe, Tom?
The rum cake is wonderful. You would laugh. We are not alcohol people but the one place if you looked through our home where you think we might be lushes is if you found all of our rum. We first had this from Tom’s mom’s friend at the lake and ever since we have had a stock of rum to make this. My favorite part of the rum cake is injecting the rum all over into the cake so it’s super moist. You’re so fun to post a picture of it.
I mentioned earlier Friday was magical and this is one more example. Jeff had stopped by to borrow a cup of sugar. We all talked a bit and Tom (who was most likely waiting on the cup of sugar) came by with Dusty(their dog) to round up Jeff. Dusty and Kennedy had a good time playing, we all had a great time talking and giving taste test of our meal and Carolyn and I went off to walk Kennedy. Well it started raining and we were about 15 minutes from our house. It looked like it was going to really pour and then it stopped. When we arrived at our home the sun was out and that cup of sugar had turned into a hand delivered plate of rum cake. What could be better than that.
Carolyn, I can’t believe you transferred the cake to a real plate for a picture! Everyone should know that it was delivered rather ingloriously on paper plates for quick consumption. I’ll be happy to share the recipe soon, but it’s ridiculously easy – the only trick (as Jeff noted) is infusing the rum syrup throughout the cake so it’s extra moist and rum flavored in every bite.
I am not a huge sweet eater, but this cake and a cup of coffee for breakfast….I think I need that recipe too!

I do agree though after a great meal and some rum cake it sortof puts you into a food coma 🙂
